Frankie’s Italian Kitchen & Bar is seeking a passionate and inspiring Head Chef to plan and direct all Italian and European food preparation activities, supervise kitchen staff, and ensure outstanding dining experiences. Rooted in family tradition and authentic recipes, our 240-seat restaurant operates seven days a week from 7:00 a.m. to 10:00 p.m., serving true Italian culinary excellence with a dedicated team of 73 staff members - growing to 85 during peak season - while offering an exceptional wine program and live jazz four nights per week. At Frankie’s, it’s all about family, food & friends.
Key responsibilities include, but are not limited to:
Plan, organize and oversee all food and culinary preparations
Estimate amount and costs of supplies and food items and make requisitions for all
Maintain records of food costs, consumption, sales and inventory
Create menus, develop and introduce new recipes
Ensures that all dishes consistently meet established quality standards
Recruit, hire and train staff in preparation, cooking and handling of food
Supervise and coordinate the activities of sous-chefs, specialist chefs, chefs, cooks, and other kitchen staff
Instruct cooks in preparation, cooking, garnishing and presentation of food
Prepare and cook dishes for customers, including specialty items for special events as well as for customers with food allergies or intolerances
Coordinate the procurement of kitchen equipment and oversee maintenance and repair arrangements
A culinary diploma or equivalent qualification is considered an asset.
